Under the Bodhi Tree was opened in July 2014 by Abraham Go and Chef Stephen Rouelle. Chef Stephen, formerly Executive Chef at the Fairmont Orchid, had recently transitioned from a standard American diet to raw veganism. The resulting physical and mental benefits inspired him to share his newfound knowledge, so Abraham and Stephen set out to provide a healthy, customizable option to those visiting and living on the Kohala Coast.
For the menu, the intent was to showcase the quality of Big Island's organic produce with vibrant and flavorful dishes. Personal relationships with farmers resulted in the highest quality of produce and access to all the island's growing seasons. The community response was overwhelmingly positive, and Under the Bodhi Tree is fortunate to be expanding in the next year to include locations in Pahoa and Waikoloa Village.
